The methods and even the purpose of using barrels in making wild sour beers is different for traditional European sours such as Lambics and those of the New World.
Brett from British craft brewery The Wild Beer Co. explained the difference during our craft beer roundtable on barrels and barrel-ageing. This also featured Italian craft brewery Brasseria della Fonte, and Croatian craft brewery Zmajska Pivovara, as well as French cooperage ASC Barrels.
