New Release: Far Far Away

Introducing our latest Endangered Species release – ‘Far Far Away’. A beer we have been planning to brew for over a year, following on from our Endangered Species No. 15, Somewhere Far Away.

The brain child of our brewers coming together (one of which is a Kiwi), this is an IPA that champions two super fresh New Zealand hops, Nelson Sauvin and Motueka. Far Far Away is a New Zealand India Pale Ale brewed with the same recipe as our Somewhere Far Away (a New Zealand India Pale Lager), with one crucial difference – ale yeast as opposed to lager yeast.

A beer brewed to allow these wonderful New Zealand hops, Nelson Sauvin and Motueka come to the forefront of the beer, Far Far Away was double dry hopped to give you a burst of soft fruits, grape and gooseberry aromas and flavours.

We chose to ferment Far Far Away with an ale yeast as opposed to a lager yeast and we couldn’t wait to see the impact on the fermentation time, temperature and yeast would have on the beer.

Fermenting at a warmer temperature and with the ale yeast has amplified and added to the hop aromas and flavours as well as the body of the beer.

Sit back and enjoy this one while thinking of somewhere far far away.

Available now in all good independent off licences and at the Wicklow Wolf Taproom.
