Yogurt and Beer Marinated Chicken Skewers

It’s fair to say we are having plenty of BBQ opportunities so far this Summer and one of the top tips when grilling is to marinade the meat, which unfortunately so many people overlook. There are two big reasons for doing so; firstly for flavour as the marinade acts as a tenderizer and brings out the meat’s natural flavours. Secondly, what you may not know is that marinating is one of the most effective ways of reducing the formation of carcinogenic compounds, which can cause cancer. These compounds are produced when meat is cooked at high temperatures, such as grilling. Marinades can reduce the formation of these carcinogenic compounds by up to 99% as it’s believed the marinade acts as a barrier between the meat and the flames.

Anyway, with that little lesson out of the way we have a super simple yogurt and beer marinade for you. We found it on thebeeroneness.com and gave it the IPA treatment using our Hop-On Session IPA to give your chicken skewers real flavour and texture.

Ingredients (Makes 5 skewers)

  • 350g diced chicken
  • 1/2 cup plain Greek yogurt
  • ½ cup Hop-On
  • ½ tsp sweet smoked paprika
  • 1 tbs tomato paste
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 4 large garlic cloves, crushed
  • Olive oil or vegetable oil for the grill
  • 1 red or yellow pepper cut into chunks (optional)
  • 1 red onion cut into chunks (optional)

Method

In a large bowl stir together the yogurt, Hop-On, paprika, tomato paste, salt, pepper, and garlic. Add the chicken cubes and mix stir until fully coated. Cover and refrigerate for at least 2 hours and up to 24.

Preheat the BBQ to the required temperature. Once the BBQ is ready thread the chicken pieces, peppers and onions onto presoaked wood skewers. TIP: Brush the grill with the oil to prevent sticking.

Grill the chicken skewers on each side until cooked through, about 5 minutes per side.
