During our craft brewer roundtable about yeasts Amund of Norwegian Craft Brewery Eik + Tid and Jan of Dutch craft brewery De Kromme Haring explained how they manage their yeast strains in order to balance consistency with complexity.

This was part of our session on yeast that combined the experience and insight of brewers De Kromme Haring and Eik + Tid with that of cider maker Legacy. It was a fascinating chat.
