Introducing Endangered Species no. 32, Decipher. Decipher Tropical DIPA is one of the first beers brewed using WHC’s latest innovative yeast strain called ‘Hop Unlock’, a yeast developed to help unlock flavour and aroma compounds in hops. Decipher was brewed with a grain bill of Pale malt, wheat and oats with Cascade hops also added into the Mash, followed by Idaho 7 and Eureka! being added into the whirlpool.
These hop additions in the mash and whirlpool were in done in order to build up thiols (aroma & flavour compounds found in hops) that would be ‘unlocked’ by the yeast strain during fermentation as previously they were inaccessible. These flavour compounds help to give us an even fruiter IPA. The beer also received a very generous dry hop of Citra, Amarillo and Mosaic.
The result? This highly innovative and exciting yeast ‘Hop Unlock’ shone through and unlocked these thiols that were built up during the brewing process to give the beer an even fruitier flavour and aroma.
A juicy DIPA with a burst of tropical fruit flavours and aromas of melon, grapefruit, papaya, mango and passion fruit.
