Is There Still Something Uniquely Special About Decoction In Brewing?

Decoction is a process with a long history but in recent years brewers have generally come to the conclusion that a similar result can be achieved with modified malts. This saves time, water, and energy.

Kjetil Jikuin and Kevin McKinney talked about this during a chat. Both are very experienced brewers (Kevin is the founder of Third Barrel Brewing in Ireland, Kjetil founded Nøgne Ø in Norway before going on to found Solo in Crete) and both believed that modified malts removed the need for decoction.

However as Kjetil explained his consulting work with Axiom in Czechia changed his mind.
