A Year In Beer: 2023

As 2023 draws to a close and 2024 begins, we want to look back at another year that we will never forget. 

2023 was a very busy year at the brewery that saw us release 18 new beers, welcome thousands of people into our Taproom for tours and beer. We continued to keep taps, shelves and fridges stocked full of delicious beer. Here’s looking back at 2023’s incredible releases.

Endangered Species Releases

Another Nut – Chocolate and Hazelnut Pastry Stout

Another Nut is a delicious, decadent stout with lashings of chocolate and roasted hazelnut aromas and flavours.

Inspired by the infamous chocolate spread that we have all grown up with, we thought it would make for a very interesting flavour profile in a stout.

Pocket Dial – Juicy IPA with Citra, Centennial & Idaho 7

A Juicy IPA inspired by the countless times we’ve all been pocket dialled by Quincey and the numerous overheard conversations on the other end of the line.

Raindrop 0.5 – Non Alcoholic Mixed Berry Sour

A beer inspired by our Mixed Berry Sour, Raindrop – our brewers were excited to brew a non alcoholic version of our favourite sour. Raindrop 0.5 is a non alcoholic mixed berry sour brewed with raspberries, blackberries and blueberries.

Pointy Shoes 2023 – Bourbon Barrel Aged Imperial Stout

Our ninth birthday beer. Pointy Shoes 2023 is  a Bourbon Barrel Aged Imperial Stout, ged in Bourbon barrels for 12 months and brewed to celebrate our 9th birthday. Expect smooth bourbon notes of roast coffee, dark chocolate, dark fruits and vanilla with a hint of smoked oak.

Bouquet Bandit – Tropical Double IPA w/ Phantasm & YCH 303

A 7.2% Tropical Double IPA inspired by the creativity and ingenuity of our brewing team. Bouquet Bandit is brewed Yakima Chief’s new experimental YCH 303 trial, a blend of Phantasm and Cryo Hops. Phantasm is a powder that is derived from the grape skins of New Zealand’s Marlborough Sauvignon Blanc and is rich in thiols that help to unlock tropical fruit aromas in beer that would usually only come from hops.

Dark Sarcasm – Cognac and Madeira Barrel Aged Imperial Stout

An 11.0% Imperial Stout that was slowly aged for over one year in Cognac and Madeira barrels and blended by our brewers to give a complex, rich stout. Dark Sarcasm pours a deep, dark opaque black and boasts aromas of red apple, winter fruits, mulled wine and a hint of cinnamon on the nose. The taste gives further complex characteristics of dark chocolate, red wine tannins, apple crumble and stewed oranges. A beer to be sipped and savoured over the winter months.

Whirlpool Galaxy – Black IPA

Nasa’s James Webb Space Telescope recently took an incredible photo of a distant Whirlpool Galaxy, and our brewing team were inspired to brew just that, a Black IPA using Galaxy Hops in the Whirlpool.

Crossbreed Series Releases

Papa Don’t Peach – Peach, Apricot and Mango Pastry Sour w/ Jopen

We were delighted to welcome our good friends from Jopen from The Netherlands to brew something special together. Papa Don’t Peach is a lip smacking tropical pastry sour brewed with peach, apricot and mango.

Another Brique in the Wall – Double NEIPA w/ Briquehouse Brewery

We were delighted to welcome our good friends from Briquehouse Brewery in France to brew something special together. Another Brique in the Wall is a Double New England IPA brewed with massive amounts of Talus & Idaho 7 hops.

Running with Wolves – India Pale Lager w/ Lost and Grounded

We were delighted to welcome our good friend Alex from Lost and Grounded in Bristol over to the brewery to brew something special for the Crossbreed Series. Taking inspiration from their delicious Running with Sceptres, we brewed a single decoction India Pale Lager.

Sliced Can – Craft Lager brewed with Surplus Brennans Family Pan

We are delighted to have welcomed our friends in Brennans Bread to the brewery to brew a beer to do good. A collaboration with sustainability at the forefront, Sliced Can was brewed using surplus Brennans Family Pan and 100% solar power from our 120kw of solar panels. Together with Brennans Bread, we are committing to plant one native Irish tree for every twelve cans sold on our hop farm in Wicklow.

Tryfecta – Hazy Pale Ale w/ Devils Peak and Fierce Beer

Tryfecta was brewed with our friends in @fiercebeer and @devilspeakbeer to celebrate the Rugby World Cup by brewing a beer that we can enjoy together, win or lose.

Tryfecta is a 4.5% Hazy Pale Ale double dry hopped with New Zealand hops, providing a wonderful burst of tropical fruits.

Locavore Project Releases

Locavore Spring 2023 – Honey Hefeweizen

Locavore Spring 2023 is a Honey Hefeweizen brewed with heather honey supplied by our friends at @openhivehoney. The bees worked hard in the Wicklow mountains to gather the nectar to make beautiful heather honey for this brew.

Locavore Summer 2023 – Wicklow Raspberry Sour

Locavore Summer 2023 is a Wicklow Raspberry Sour brewed with Wicklow raspberries grown just up the road by the Conroy family in Kilmacanogue.

Expect Locavore Summer 2023 to be jam packed with tart raspberry aroma and flavours, with a lip smacking finish that will leave you wanting more.

Locavore Autumn 2023 – Barrel Aged Irish Barleywine

Locavore Autumn 2023 is a beer that champions the Wicklow Terroir. A barrel aged Irish Barleywine aged in ex Bourbon, @fercullenwhiskey 21 Year old Single Malt Whiskey Barrels for 12 months and brewed using our own barley.

Locavore Winter 2023 – Fresh Hop Dry Irish Stout

In late September we welcomed 35 incredible volunteers to the Taproom to help hand pick this years Hop Harvest. This is the result of that hard work and a reflection of the Wicklow Terroir. Expect a full flavoured stout that is packed with roast malt flavours and floral hop bitterness. This dark, roasty stout finishes with a clean, smooth, dryness that will leave you wanting more.

Keg Only Releases

American Amber

We brewed a small batch of our first ever beer to celebrate our 9th birthday. A beer that has inspired our journey and a beer that will always be close to our hearts, we can’t wait to enjoy a pint in some of the pubs that have supported us from the very beginning.

Eclipse Nitro Stout

Eclipse is a Nitro Stout brewed using flaked oats, speciality roast chocolate and caramel malts to give a full flavoured stout. at 4.2%, Eclipse has a smooth velvety and creamy mouthfeel with aromas of milk chocolate and roast coffee.
