Brigadiers BBQ Butter Chicken Wings Recipe
Crisp, cold lager and creamy, spicy chicken wings – a match made in heaven. If you can’t make it down to Brigadiers, they have given us the recipe for their famous chicken wings
Ingredients (12 portions):
For the marinade
- 50g ginger garlic paste
- 20g mustard pomace oil
- 10g garam masala
- 40g Kashmiri chilli powder
- 1 tsp salt
- ½ tsp ground coriander
- 10g kasoori methi
- 80g hung yoghurt
For the butter wings
- 300g marinated chicken wings
- 27g ghee
- Juice of ½ lemon
- Pinch of salt
- 25g cashew nut paste
- 40ml double cream
- 10g chopped ginger
- 2g white chaat masala
- Handful of chopped coriander
Method:
The day before, make the marinade by combining all the ingredients in a bowl. Add the wings and rub with the marinade. Place them in the bowl, cover and refrigerate overnight.
The next day, preheat the grill to 200C. Remove the wings from the marinade and cook for 20 minutes until cooked through and nicely charred.
Make the butter sauce by adding the ghee, lemon juice and salt to a mixing bowl. Add the warm wings and give it all a stir.
Add the cashew paste and double cream and stir.
Now add the chopped ginger, the white chaat masala and most of the chopped coriander. Give one final stir and stack up in a bowl. Sprinkle a little more coriander over the top.
