The second Virtual Tasting went down a treat last night, with Lily Ramirez introducing us all to the world of Drunken Salsa.
It’s perfect for breakfast foods, such as a fried or a scrambled egg, with beans and cheese and even just with tortilla chips! Lily also loves it with a nice pan fried piece of white fish and a few capers. It’s an absolute winner.

INGREDIENTS
- 1 tablespoon Olive Oil
- 65 grams Onion, finely chopped
- 1 Green Jalapeno, finely chopped
- 400 grams Tomatoes, chopped
- 80 mls Pioneer Pilsner Beer
METHOD
Heat the oil in a pan at a medium high heat. Add the onion and chilli and cook for a couple of minutes until the onions soften and become translucent.
Add the tomatoes and mix well. Season with salt to taste.
Once the tomatoes are starting to soften, add the beer and incorporate everything. Continue cooking for further 4 minutes until the salsa starts thickening a bit. Taste to correct seasoning, pour the remaining of the beer in a glass and open the tortilla chips!
