Introducing Endangered Species no. 31, Toto Sorachi. A beer inspired by the infamous Italian that broke a nation’s hearts, Toto Schillaci. A story that Quincey loves to tell is how he managed to follow the Irish team around on their training camp in Malta and then to the infamous Italia ‘90.
Quincey was working at the time with Ballygowan water and was with the team to make sure they were well refreshed and became known as ‘the Waterboy’. It was a summer that still to this day was one of the greatest moments of Irish sport and this is a beer inspired by ‘the Waterboy’ and Italia 90.
Toto Sorachi is brewed with Pilsner malt, Sorachi Ace hops for bittering and German hops Huell Melon and Ariana for flavour and aroma.
Dry hopped and then slowly lagered to allow flavours develop, you can expect a refreshing pilsner with bready, malt sweetness, citrus and melon aromas and a clean, crisp bitterness to finish.
