Latvian brewery Hopalaa make a lot of different beer styles, including a very popular range of sours. Unlike many breweries they don’t make kettle sours, but neither are they using spontaneous fermentation, or a replicable house yeast.
We had a live beer webinar with Hopalaa and Irish brewery Black of Kinsale during which Hopalaa founder Kristaps explained the process.
