Cavehill w/ Rabbit Hole Distillery

At Wicklow Wolf, our mission is to brew exceptional beers without compromise and with true passion. Our Crossbreed Series allows us to celebrate that passion with friends and we are extremely excited to tell you all about the first Crossbreed Series release of 2024.

Introducing Cavehill, a Bourbon Barrel Aged Kentucky Common made in collaboration with our friends from Rabbit Hole Distillery in Louisville, Kentucky.

We were delighted to collaborate with our Kentucky based friends in Rabbit Hole Distillery. After discussing brewing a beer together over some whiskey, Quincey and Kaveh (founder of Rabbit Hole) hatched a plan. We dug out the recipe for one of the very first Wicklow Wolf beers, Kentucky Common and decided to get a little creative.

Aged for 6 months in specially selected Rabbit Hole bourbon and rye barrels, this beer borrows it’s name from Rabbit Hole’s signature Kentucky Straight Bourbon, Cavehill.

Coming in at 7.0%, you can expect rich toffee and caramel flavours with a hint of rye earthiness and spice coming through in this bourbon barrel aged Kentucky Common, finishing with some nice toasted wood character.
