Burning Sky has revealed a batch of new releases, with a distinctly winter theme, in the run-up to the festive season.

These are the penultimate releases of the year. The last ones will be revealed on 30th November. For now, the new beers are:
Robust Porter (5.8% ABV, can)
A rich and satisfying beer using Maris Otter barley and a complex range of roast and crystal malts. It’s hopped with spicy Sussex-grown Target hops.
Saison Hiver (6.2% ABV, can)
A saison brewed to a strength suitable for the cold winter days. Made with pilsner, Vienna, and Munich malts and a touch of spelt, noble hops, and a subtle spice addition. It has been fermented with the house saison strain and then dry hopped.
Cuvee 2019 (6.5% ABV, 750ml bottle)
“Choosing our finest Saison from foudre no 1 and wine barriques, we blended in a large portion of Belgian lambic that was imported from Belgium (when things were easier), and aged at Burning Sky,” says the brewer. A limited number of these bottles are available.
Saison de Fête 2023 (7% ABV, 750ml bottle)
A special release mashed with pilsner, spelt, and wheat malts. Subtle spices compliment the noble hops. The beer has been fermented with Burning Sky’s unique mixed fermentation culture and aged in wine barrels for a year.
Monolith 2023 (8.2% ABV, 750ml bottle)
Aged for three years in a Chianti foudre with wild yeast strains, the resulting beer is full of chocolate and vinous oak flavours, with farmhouse aromas and mild acidity.
Assemblage 5 (6.2% ABV, 750ml bottle and 1.5l Magnum)
A unique annual release, blending beers of different ages from Burning Sky’s mixed and spontaneous fermentation programmes. Each barrel brings its own character to the table.
