Amity Brew Co has released a double drop of its barrel-aged Spinning Mill project beers, each based on an imperial stout brewed in 2023.
Number 007 has been aged for 12 months in first-fill Wild Turkey bourbon barrels. It boasts deep flavours of dark chocolate and cocoa powder, complemented by the smokey sweetness of bonfire toffee.
The barrel-ageing imparts warm bourbon notes, with prominent vanilla notes from the oak that enhance the stout’s velvety texture.
Number 008 has spent a year in a first-fill Appleton Dark Rum barrel. It contrasts 007, offering notes of fresh apple, sweet raisin and dark treacle, each enhanced by the rum barrel ageing.
“The crispness of the apple contrasts beautifully with the dried fruit richness and spice of raisin, while the treacle offers deep, molasses-like sweetness,” says the brewer.
The dark rum barrels impart a warming finish with subtle hints of oak and spice, rounding out the stout’s bold, malty character.
The beers, both 11% ABV, have been pouring in Amity’s taproom and are now available online.
